Marcus at Signature Food Festival
Marcus Wareing was the opening act at this year’s Signature Food Festival, with a sold-out two night residency at Aberdeen’s The Chester Hotel.
The annual festival, organised by The Chester Hotel’s owner, Graham Wood and his wife Gillian, raises money for local charities, having generated over £500,000 since its inception in 2017. This year, the dedicated charity was The JEllie Foundation.
With the help of the brilliant kitchen and front of house teams, as well as Mark Froydenlund and Jack Hazell from the Marcus stable, guests were treated to a five-course menu, designed to reflect some of Marcus’ iconic dishes and culinary approach.
The Menu
Smoked Mackerel & Langoustine Tart, Champagne Sabayon, Caviar Mousseline
Roast and Marinated Breast of Quail, Crispy Leg, Carrot & Rosehip, Black Garlic, Pine nut
Best End of Herdwick Lamb, Lamb Crackling, Pissaladière, Black Olive, Anchovy Cream
Nutmeg & Custard
Verbena Parfait, Raspberry & Bergamot Mousse, Olive Oil Sponge
Tea, coffee, petit fours
With a warm welcome from Marcus and a quick chat with every table throughout the night, guests were able to say hello, ask questions, chat about the food and find out what’s coming next! Most importantly, Marcus was able to thank them for coming along in support of such an important cause.
